Thousands of years ago the ancient Chinese, and later the Greek philosophers believed that a human being has three bodies: physical, mental, and spiritual. They did not interpret them exactly the same way, but they all admitted their existence and agreed that each body was as important as the other. They thought that if people learn to balance these sides of their nature, they move toward agreement with themselves and with the world, harmony and happiness.

Chapter 1 | Food and Beverage Pairing Guidelines

There are three major approaches to food and beverage pairing:

1. Sensational – when your five senses guide your choices, considering the “overall impression” given by such factors as the dish’s and beverage’s weight, volume, flavors, textures, and temperature.

2. Geographical or Regional - where pairing a dish with a beverage native to the same region makes a classic pairing and represents historical wisdom.

3. Scientific – when the chemistry of the food and beverage is analyzed for relative pH levels — acidity versus alkalinity.
