The Geographical or Regional Approach correlates to a famous proverb, “When in Rome, eat and drink what Romans do.” Understanding regional pairings is an important rule of thumb applicable to any beverage. Sommelier Paul Roberts recommends that “every time wine lovers buy another wine book, they should also pick up a cookbook from the same region.” It is so easy to get lost in the enormous world of food ingredients and beverages which create a limitless number of pairing combinations to be tried that it seems unnecessary to re-invent the wheel. We can benefit from the chef experts of history by paying attention to classic pairings which were already tried-and-found-true. Pairing regionally is a fun way to travel around the world enjoying perfect or almost perfect combinations.
